“Man. I admire your dedication to process. I use a DF64V. It’s dialed in pretty good for my mainstay beans. I own (but no longer bother with) a wdt and a screen. I don’t use paper filters… I weigh my beans, do a quick spritz for static, pour into the spinning grinder, tamp, and pull. Just about perfect every time. Once I bought a quality grinder, I found almost all of the other gadgets and rituals pointless. YMMV. Have fun out there!”
“Tldr: buy the eureka. Hope this helps. My 3rd grinder was a df64 gen2. It was too big and clunky for my space and got replaced by a df64v gen2. After a few months, the circuit board gave up all of the sudden, and while in service, I got a gaggia mdf55, the new one, which is a eureka specialita with different case. I would always go with the df64v over the df64 because it has a smaller footprint, is way quieter, that magnetic shute is way better for cleaning. But the df64v cannot be turned off while plugged in. You only stop the motor. This means that the rpm display is always on and eats over a month 4 times more electricity than what you use while actually grinding (I measured consumption with it always plugged in and with a smart plug that would disconnect it after use, over 2 months) and because of its shit design whe "plasma generator" is always on and will make wierd cracking sounds to the point that you will keep it disconnected from the power. I don't know if the non V has the plasma generator always on. It never made those sounds in the few months I had it, but the V started doing them after one week. And the service tech said that the df64v has no circuit protection built in, this beingbthe reason it failed, so this tells you something about build quality and longevity. In the end I am selling the df64v and keeping the gaggia mdf55, which is quieter than even the v, seems to have way better build quality, it is made in Italy, not China, has less electronics (I opened it), it has a built in switch that cuts power to the whole thing, and finally, what matters most, for me coffe tastes better.
