“You realistically need 3 knives for most things. Chef's/gyuto will take care of fruit, veggies, meats, breaking down fish, etc. Takamura as mentioned by another redditor is a great choice. Stay away from Shun and Miyabi. They're overpriced and Shun's are prone to chipping. Paring/petty will take care of finer cuts, trimming fat, some butchering, etc. A petty is probably more useful than a paring due to having a longer blade. Tojiro VG10 petties will be a decent value. Harukaze, Hatsukokoro also have decent options. Serrated knife for cutting crusty breads and what not. Victorinox makes a good one and it won't break the bank.”
