The best sanjo smiths are yoshikane, mazaki, nihei/shinkiro, and masashi The best if takefu is shiro kamo, takamura, anyru, yoshimi kato Tosa is all Shindo but he’s out of stock Sakai would be Tetsujin/myojin and Nakagawa Personally I would get something from sanjo, or maybe a shiro kamo or takamura. I have A LOT of experience with Japanese knives, pls feel free to ask questions. “Umm, honestly, not really. most the knives i buy are sold individually, i just happen to know that the link the op posted are knock-offs. You mean hone kitchen, right? Good home brands that i k kw of would be like zwilling but not what walmart sells they actually have several lines so be mindful, believe it or not paderano makes a decent knife, mac and mercer are fairly cheap but still good. It's actually far more difficult to answer what i is a good cheap knife than it is a good expensive one. Sets just are not something chefa typically buy. But I collect Japanese knives so i know what the lemons are. Fun little trick type in yoshimi kato knives in Amazon. Nothing will come up related to him because Amazon doesn't carry his work.
