Thanks for the awesome response! I actually have two Harukazes and I like them a lot. I was looking for something a bit nicer for the Nakiri, and the Kato had a similar style which had me leaning towards it. I’d appreciate something that does a bit better with thicker foods, so the Kurosaki sounds like it might be what I am leaning towards. The Harukaze Santoku I have feels like it gets a little stuck on certain foods.
