Not sure why allmost noone are able to answer your question, but copper is absolutely worth it especially for a saucier! You wont want it to be extremely thick, but still thick enough to actually heat evenly. Your only option for induction compatible copper look is De Buyer Prima Matera, but its expensive but especially for a saucier it might be worth it!

I have tried De Buyer Prima Matrae: https://www.debuyer.com/en/475-prima-matera Was not durable enough for my frypans standards, so I have a Falk copper core on the way. In my experince copper, at least the Prima Maetra on induction is stupid fast.

Return the GreenPan and keep the Viking. The coating on GreenPan lasts like two months before food begins sticking to it. Six if you're lucky. They coating itself will still be in good condition, but the nonstick performance never lasts long. It's been said that the GP5 has their most durable coating, but there's not a whole lot of difference between that and the very early GreenPans when they launched on HSN back in 2007 or so.
