Best praise vs top criticism for Staub Cast Iron Round Cocotte 7-Quart
“Scouring pads, baked in oven on cleaning cycle, barkeeper's friend, cooked in pizza oven, over live fire, absolutely beat up. All things that are no problem for my Staub, which always can be returned to new. Still, it's 7 ply stainless. Feel like someone knows the way...”
“Long time induction and enameled cast iron owner. It’s not ideal to have a cast iron Dutch oven so much bigger than the induction element. Cast iron is actually a very poor conductor of heat, it’s excellent at retaining heat but not spreading it out to the very edges. You’re also more likely to stress the enamel for the difference between middle and edges. Not sure what the weight limit is on the control freak but staub is colossally heavy. Le Creuset is lighter but still very heavy. In your case, stainless steel is the way to go.”
