What I'm saying is get good. Practice, and it will become easy. Really, though, it's not hard. Without practice, people can easily mess it up even on a teflon pan. My best tip is to preheat on medium and add a good olive oil once the pan is warm. Once the olive oil starts to smoke, add a small amount of butter, and once the butter melts and stops sizzling, add your egg. If your pan is hot enough, the egg will start to set up immediately, starting from the outside. As soon as the egg starts to set up, get a fork and stir it vigorously. You'll see curds start to create height, while liquid egg runs into the voids. Let the liquid set up and stir again. Continue until the curds stop sticking together. Now continue to cook this for an additional 5-10 seconds, fold and plate. Whole process should take less than 30 seconds. Also, I don't recommend burning your oil repeatedly. Olive oil's smoke point is just a good temperature indicator for eggs. Eventually, you'll want to use a higher smoke point oil, like clarified butter or peanut oil. As for thinking there's not enough seasoning on the pan, so therefore you're cooking bacon in it, don't do that. The bacon is just stripping the seasoning and likely leaving residue. You don't even need seasoning to cook nonstick eggs. People do this in copper and stainless pans just fine. The seasoning only gives you about a 1% advantage in preventing sticking when the food sits on the pan surface without enough oil under it.”
