“If you're not using stainless fry pans, you may have already answered your own question. As a rule, sets are only a value if they are the pieces you actually want. You know what you want. If you're just looking to upgrade the sauce pans and the saute, and perhaps a stock pot, then it's possible there's a set that'll get you 4-5 of those pieces. The All-Clad 12-piece D3 set comes to mind. It includes 2- and 3-quart sauce pans, a 3-quart saute pan, the highly useful steamer insert that works with the 3-quart saucepan, and an 8-quart stock pot. All useful pieces and that set was a steal at $550 last December at Costco. It would be worth it even if you never used the 3 fry pans that are included. But generally, you are advanced enough to probably be choosing each piece individually. For example, I prefer All-Clad sauciers to the sauce pans. You can pick those up fairly regularly at the seconds sale. For your dutch oven, I highly recommend sticking only to Le Creuset or Staub. They are joys to use and last forever.”
“I would lean toward the D3, even though I think a 13 piece set is overkill (the piece count is padded with an extra frying pan, a steamer with a lid). I bought a smaller D3 set in the past and I was easily able to add other D3 pieces later on when the need arose. It's often recommended that one avoid sets and build to your cookware set one piece at a time, which can seem more expensive but it's really the way to go.”
